This cheese, Queijo da Serra is one of the most famous cheeses from Portugal known throughout the world for its unique character and intense flavor. It is produced in the mountainous region of Serra Da Estrella and dating back to the 12th century, Queijo da Serra is a raw sheep’s milk cheese coagulated with thistle based rennet instead of animal based rennet. It is cured for a minimum of 30 days and sometimes up to 120 days. Two styles of the cheese are popular in Portugal ― buttery and rich, oozing once you cut into it, and more mature, firm, and pungent.
